In my efforts to eat healthy and lose weight, I’ve gotten really creative with my quick and healthy meal choices. This chicken stir-fry literally takes 15 minutes tops, with only 5 minutes of actual preparation.
First things first, gather all your ingredients. I found a mix of my favorite stir-fry veggies freshly packaged in the produce section. You can also get the frozen variety if you can’t find a fresh mix in the store. Next, pick up some fully-cooked cubed or shredded chicken breast, or keep some homemade cubed chicken on hand for times like this. Lastly, get your favorite stir-fry sauce and cooking oil. I used Teriyaki and Sesame seed oil.
Heat a tablespoon of oil on a low-medium heat until your pan is warm and put in your washed veggies, and fully cooked chicken. Stir-fry the chicken and veggies until its all coated in oil and mix in your sauce to taste. I only used about 2 tablespoons for the whole pan. I also seasoned with salt, pepper, and red pepper flakes.
Mix all of your ingredients in the pan, then lower the temp and cover to steam for 10 minutes, or less if you like crisper veggies.
After that, your chicken stir-fry is ready to eat!
